„In meiner Küche darf sich jeder einbringen“ Über 10 Jahre ist der gebürtige Österreicher Johannes Zapf inzwischen für das leibliche Wohl der MADISON-Gäste zuständig. Wir haben den Küchenchef einen Tag bei seiner Arbeit begleitet. “In my kitchen, everyone is allowed to contribute.” Austrian-born Johannes Zapf has been responsible for the culinary well-being of MADISON guests for over ten years. We accompanied the head chef at work for a day. Ü Taste, obviously, is open to debate. If it was only up to Johannes Zapf, the menu at the MADISON would probably look a little different. “But the main thing is that my guests like the food. That’s the best compliment you can receive.” And as a chef, you sometimes have to bite the bullet. Before the MADISON, Zapf cooked on a cruise ship. One day, a colleague from the Sansibar restaurant on Sylt made his special pasta sauce: tomato puree, hollandaise sauce, sambal oelek, cream cheese. Stir it all together. Done. “We other cooks couldn’t believe it. ‘He’s got a nerve, we thought!’ But what can I say? It tasted good! So good, in fact, that I brought the recipe for our ‘Penne Sansibar’ to the MADISON.” A colleague happens to pass by and hears snippets of our conversation. “Are you talking about the pasta sauce? It’s so delicious!” Johannes Zapf shrugs his shoulders and laughs. “Told you so.” Kaiserschmarrn is a matter for the head chef A lovely sweet smell is coming from a pan. Johannes Zapf sifts icing sugar over the Kaiser- schmarrn for a second time. It’s a special order for a few regulars who know that Zapf is Austrian and can “do” the classic Austrian pancake called Kaiserschmarrn. “It’s not actually on the menu, but it’s not very busy right now, so I’ll squeeze it in.” Lucky, because the Schmarrn is a matter for the head chef alone. “I have the recipe in my head. It’s not written down anywhere.” When there’s a lot to do – which, in normal times, means almost always – other things take priority. Johannes Zapf’s kitchen is his kingdom where he organises everything himself. And the day starts early: the first cook arrives at 5.30 a.m., prepares breakfast and accepts the first deliveries. Johannes Zapf arrives after taking his children to the nursery. Then it’s time for the morning meeting. What events and coffee breaks need to be ber Geschmack lässt sich bekanntlich streiten. Wenn es nur nach Johannes Zapf ginge, würde die Karte im MADISON wohl etwas anders aussehen. „Hauptsache ist aber doch, dass es meinen Gästen schmeckt. Das ist das schönste Kompliment!“ Und dafür muss man als Küchenchef auch mal über seinen Schatten springen. Vor dem MADISON hat Zapf auf einem Kreuzfahrtschiff gekocht. Ein Kollege aus der Sansibar Sylt hat dort eines Tages seine Spezial-Pastasoße gemacht: Tomatenmark, Sauce Hollandaise, Sambal Oelek, Frischkäse. Zusammenrühren. Fertig. „Wir anderen Köche konnten es nicht fassen: ,Na, der traut sich was!‘ Aber was soll ich sagen? Es hat geschmeckt! So gut sogar, dass ich das Rezept für unsere ,Penne Sansibar‘ mit ins MADISON gebracht habe.“ Eine Kollegin kommt zufällig vorbei, hört Gesprächs- fetzen. „Sprecht ihr über die Pasta-Soße? Sooooo lecker!“ Johannes Zapf zuckt mit den Schultern, lacht: „Was habe ich gesagt?“ Kaiserschmarrn ist Chefsache Es duftet saftig-süß aus der Pfanne. Johannes Zapf siebt das zweite Mal ordentlich Puderzucker über den Kaiserschmarrn. Eine Spezialbestellung für ein paar Stammgäste, die wissen, dass Zapf Österreicher ist und Kaiserschmarrn „kann“. „Eigentlich steht der nicht auf der Karte, aber jetzt ist gerade nicht viel los, da schiebe ich den mal dazwischen.“ Glück gehabt, denn der Schmarrn ist Chefsache. „Ich habe das Rezept im Kopf. Das steht sonst nirgends.“ Wenn viel zu tun ist, was in normalen Zeiten fast immer der Fall ist, haben andere Dinge Priorität. Seine Küche ist sein Reich, hier organisiert Johannes Zapf alles allein. Und der Tag beginnt früh: Um 5.30 Uhr ist der erste Koch da, bereitet das Frühstück vor, nimmt die ersten Lieferungen an. Johannes Zapf kommt, nachdem er die Kinder in die Kita gebracht hat.
